A New Summer Dish

The theme for most of my meals the last few months has been quite simply eating anything with a prep and cooking time of less than 20 minutes. Non surprisingly this means I'm finding myself stuck in a culinary rut, eating the same combinations of foods and an overwhelmingly boring amount of chicken or salmon with veg - usually either cajun/Mexican flavoured or soy/Asian flavoured. 

Pinterest is my go to for inspo, along with a flick through Women's Health and Glamour and I realised a few new essentials needed adding to my store cupboard. 

Namely cropping up were turmeric, sesame and lemongrass. These aren't ingredients alien to me, but neither were they regular additions to my meals. After with a bit of reading up on how delicious and nutritions these superfoody spices were and armed with a cod fillet, a fridge full of "stir fry veg' (and extra broccoli and bok choi) and my trusty chuck it all in the pan method, I soon had a pretty amazing plate of dinner for 1. 

You'll need:

1tsp coconut oil
1 large cod fillet
1 tblsp seasame seeds

3/4 florets broccoli
 large handful bok choi
80g edamame beans
large handful beansprouts
large handful kale
1 grated carrot
1 chopped red onion
80g mange tout
1/2 inch grated fresh ginger
garlic cloves to taste

To start, coat the cod fillet with sesame seeds and pop on a baking tray. Cook this under the grill for around 8 mins each side to cook on a high heat and crisp up the seedy coating. 

Put your tsp of coconut oil into a wok and add the onion, ginger and broccoli first. After around 5 mins, when the broccoli is starting to soften, throw in the rest of the veg and fry off for a further 10 mins, or until cooked. I like my veg al dente rather than totally soft and for the carrot to have a little crunch. 

Serve out your vegetables and top with your cod, before dressing with  splash of soy sauce and sweet chilli. A handful of salted peanuts for extra crunch is also an incredible topper for this dish! Deeelish.
