Quinoa Pizza

I have to say, when my boyfriend suggested this recipe I was a bit sceptical as to how it would work. I love Quinoa and I love pizza but I couldn't quite imagine the Quinoa working to form a very satisfying pizza base. Cauliflower pizza is also on the "to try" list but last weekend we thought we'd give this one a go. 

I was pleased to discover, it's bit of a game changer! Yay! Ticked the wholesome, more-ish, veggie friendly and full of only the good stuff boxes but also so "pizzary" it's a Friday/Saturday night winner. 

You MUST try it!

1 1/4 cups of cooked Quinoa
2 eggs
2 tsp olive oil
2 tsp basil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp gluten free baking powder

In a bowl, whisk eggs, olive oil and seasonings. 
Add cooked quinoa and mix well with a spoon.
Spread the mix (will look like batter) onto a pizza tray lined with greaseproof paper. (Make sure it's spread thinly!)
Bake at 180 for 15 mins - It may take less time, check it! 

Add your toppings and bake for further 10 mins. 

I'd suggest topping with homemade pesto, spinach, chicken, mushrooms, red onion, mozarella or goats cheese.
